Does it attract rats?

Once you bury the pre composted ” mess” – can this attract rats or other pests?

Not if its done properly.  Fermented foods are too acidic, and do not taste good to animals.  Initially, they may dig it up, but usually they do not return.  However, if they do become a problem, then there are many simple things you can do to  deter them.  These include
1) leaving the foods in the bokashi bin for an extra week (this will ensure a more complete fermentation) 
2) chopping the food smaller before it goes in the bin (smaller items ferment faster and easier than large)
3) put down a small piece of netting or chicken wire overtop of the freshly burried bokashi area  (leave in place for a week, by which time the foods will no longer be attractive to rodents).
