Using a plexiglass to compress the air out and leaving in between adding scraps?

A piece of plexiglass will work well for compacting your food waste and keeping air away from your food waste. Other commonly used items include plastic bags and old kitchen plates. And, yes, the plexiglass can be left place during the 2 week fermentation period.
