Smell your bin and you will know! If it smells rotten then you need to add more bokashi. If it has a sweet and sour pickle-like odor then continue doing what you’ve been doing!
We recommend adding 1 to 2 heaping tablespoon of bokashi bran for every 1″ of food scraps. Remember, you can never add too much bran. In fact, more is better. Be more generous with adding bokashi bran if you are putting meat, dairy, bones or cooked food and bones into your kitchen composter.
