Bokashi jn the winter
I live in New Hampshire. I’m not sure how a soil factory would work if everything freezes. If you had enough buckets can you let it continue to ferment all winter?

Yes, you can leave the fermented food waste in a sealed container until you are ready to use it in the spring. Once the food waste is fully fermented, the microbes simply go dormant and wait to be mixed with garden soil.
